Joannas Confetti SANDWICH Cookies (Veganized)
In Celebration of the premiere of Silos Baking Competition, my baking cast mates and I decided to bake Joannas Sprinkle Cookie Sandwiches. Just because we are vegan it does not mean we have to miss out on all of the amazing recipes shared in Jos cook book. Fun fact, most of the cook books I own are not vegan but if you’re new to this whole thing and need a starting point to start converting recipes, I’ve got you!
Mine are not as cake like and puffy as Joannas but they were delicious! My two youngest and I enjoyed them.
Below are the substituins I made
Egg- 1/2 cup just egg
Butter- Substitue 1 for 1. So if the recipe calls for one stick of butter or 8 tablespoons use the same amount of butter
Milk- DO NOT SUBSTITUTE. For this recipe you really don’t need to add any plant based milk. Adding any extra moisture will make the frosting too soft for the cookie sandwiches so omit it all together.
